Fresh Coconut Cookies

Coconut Toffee Pizzelle with Raspberry Sauce by norwichnuts
1 1/2 cups coconut milk
2/3 cup powdered sugar
1/3 cup corn starch
1 tsp vanilla
1/2 cup fresh grated coconut
Mix all ingredients except grated coconut in saucepan and stir over medium heat - bring to a boil and continue stirring until mixture starts to thicken. Cool and then add grated coconut.
Mix toffee into pudding and serve as you wish.....
1/2 pint corn syrup
1 cup raw sugar
? cup soy creamer
Few grains salt
1 tablespoon corn oil
6 drops vanilla
Combine the ingredients with the exception of the vanilla, and boil until the mixture forms a fairly firm ball when tried in cold water.
Add the vanilla, beat a few minutes until the mixture is beginning to cream and looks thick, then pour one-half inch deep into a pan lightly oiled with corn oil and let stand several hours to become firm or mix into your favorite soy cream, pudding or cookie dough.
Raw Coconut Macaroons
These were made with the pulp leftover after making fresh raw coconut milk (which is almost universally agreed by those who try it to be a foodgasm).
The cookies too were quite yummy though best immediately out of the dehydrator not just because they're warm but also a toasty crispy outside yet still moist inside.
The pea pods were the season's surprise, with nearly non-stop constant production yet incredible flavor.
